15 months after receiving the necessary licenses from the Board of Selectmen, Pancho’s Cantina — a Mexican restaurant — opened its doors on Tuesday evening.
“We plan on opening at 4pm over the next few days. We will offer a limited ‘Soft Opening Menu’ — about half of the menu — for now,” Owner and Executive Chef Fonzi Chavez told Wilmington Apple. “We’ll start regular business hours this weekend and commence regular Lunch Buffet hours next week. The official Grand Opening celebration will be at later time.”

#1) Location: Pancho’s Cantina is located at 206 Ballardvale Street, in the strip mall next to Target. The restaurant anchors the strip mall, occupying its largest space and corner unit. Neighbors include Dunkin Donuts, Subway, Sweet Pizza, Hair Cuttery, and Wilmington Dental. The location had been vacant since the mall opened in 2015. The restaurant boasts 3,868 square feet, with approximately 108 seats, and includes a full bar.
#2) Hours: Pancho’s Cantina’s hours of operations are 11am to 10pm (Sundays-Thursdays) and 11am to 11pm (Fridays & Saturdays). A lunch buffet will be offered from 11am to 2pm on weekdays. On-The-Go “Taqueria” will be available 11am to 8pm daily.

Another Mexican Restaurant Soon Opening On Other Side Of Town
Pancho’s Cantina’s opening comes after last month’s news that Casa Blanca Mexican Restaurant will be opening in town at the old Chili’s location (207 Main Street), likely in October.
